With more than 100 varieties, this famous wall has been the backdrop of wedding and family photos for five decades. Hawaiians love their poke – a raw seafood salad often served as an appetizer that became popular soon after The Kahala Hotel & Resort opened in 1964. In Hawaiian, poke means “to slice or to cut.” The Kahala Hotel & Resort’s original version of this famous dip uses fresh local ahi.
Here’s the recipe so you can take the flavors of The Kahala Hotel & Resort home with you after your stay!
2 cups Mayonnaise
½ cup Gari Shoga (Pickled Ginger) chopped ½ cup Green Onion, chopped
½ cup Chinese Parsley, chopped
¼ cup Sesame Seed, Toasted
½ cup Lemon Juice
½ cup Soy Sauce
2 tsp Ground White Pepper
¾ cup Fresh Ahi, Diced
Mix ingredients together. Keep chilled until ready to serve. If preparing ahead, mix all but pepper and ahi. Add in just before serving.

When you walk down the Orchid Stairs to the lower lobby, you will notice a magnificent and extremely rare Hawaiian Flag Quilt displayed on the wall. This type of quilt is often known as a “Wedding Quilt” and is sometimes made to commemorate royal or noble marriages. The Kahala Hawaiian Flag Quilt is particularly rare because it most likely dates back to the King Kalakaua period (1882-1891). Only a handful of Hawaiian Flag Quilts are known to exist from this time.
Hawaiian Flag Quilts were known to pay tribute to the kingdom’s kings and queens who were adored by the common people of the islands.
Hawaiian Flag Quilts were a revered symbol to their beloved kingdom as the flag had become a forbidden object to display following the fall of the monarchy. Even today, these quilts are held in the highest esteem and are treasures of Hawaiian families.
The Kahala Hotel & Resort’s natural ocean water lagoon is home to a family of playful Atlantic Bottlenose dolphins where guests have the chance to come face-to face with these amazing creatures. Get to know them!
Hoku: meaning ‘star’ in Hawaiian, Hoku was born at The Kahala in 1991 and is certainly a stellar dolphin. He even has a restaurant named after him.
Kolohe: or ‘Rascal’ is from Dolphin Quest Hawaii. Kolohe is usually one of the first to try new things and is known for the many freckles on his belly.
Nai Noa: ‘The Wanderer’ Nai Noa is immediately recognizable by his chocolate-colored topside. Nai Noa was born at Dolphin Quest Hawaii in October 1997.
Liho: Meaning ‘rare and precious’ in Hawaiian. Liho is a terrific dolphin with an extremely apt name. Liho loves any guest interaction and is one of a kind.
Lono: Named after the Hawaiian god of fertility and farming. Lono is the largest and oldest of our Dolphin QUEST Oahu family and has sired several calves.
Hua: Hua means egg in Hawaiian as he was born on Easter Sunday. Hua’s distinct feature is that his lower rostrum is longer than his upper rostrum and ‘under-bite’.

To satisfy your cravings when you return home, here’s our original recipe along with our pancake mix, also available at Signature at The Kahala Hotel & Resort. It’s the Kahala Hotel & Resort way to start a brand new day! At home, just mix up a batch, keep calm and pretend you are at The Kahala! Bon Appetit!
Kahala Thin Pancake Mix (10 oz.) contains bread flour, sugar, salt.
To be added to the pancake mix:
2 ⅔ cup Milk
¼ tsp Vanilla Extract
Mix the eggs and pancake mix until smooth. Gradually add in milk and vanilla, then strain. Preheat a no-stick pan over medium heat, gently ladle in 1-1 ½ oz. of the thin pancake batter. Allow to cook 1 minute or until light golden brown on each side. Remove from pan and place on a sheet pan to cool or serve immediately.
8oz unsalted butter at room temperature
1 cup Maple Syrup
Cream the butter while gradually adding in maple syrup.
