As a Christmas pastry, Stollen was first baked and served in Germany’s Saxon Royal court in 1427. A loaf-shaped cake-bread, the holiday treat is traditionally made with dried fruit, nuts, and spices and dusted with sugars or icing. The shape of the cake was originally meant to signify the baby Jesus wrapped in swaddling clothes. Similar cakes made by the Italians are called panettone, and by the Dutch—Kerststol. The Dresden Stollenfest is world famous and takes place on the Saturday before the second Sunday in Advent. Their celebratory Stollen often weighs between three and four tons and paraded through the streets of Dresden to the Christmas market.
Chef Michael Moorhouse’s version of this old world holiday treat includes a decadent mix of raisins, orange, and lemon peel, slivered almonds, rum, marzipan, and his own special blend of fragrant spices such as cinnamon, cloves, allspice, ginger, black pepper, and nutmeg. Fresh out of the oven, the Kahala Christmas Stollen is spread with melted butter and then sprinkled with granulated sugar and topped with a final dusting of confectioner’s sugar. It’s downright delicious.
