Honolulu, HI…An award winning 25-year food industry veteran will lead The Kahala Hotel & Resort’s food and beverage department effective June 18, 2012. Restaurateur, farm-to-table culinarian, and food experience engineer Todd Oldham has been named Director of Food and Beverage for the 338-room luxury resort.
Oldham will oversee the resort’s four restaurants and lounges (Hoku’s, Plumeria Beach House, Seaside Grill, and The Veranda), and the 24-hour in-room food service department. His first major project will be to oversee the remodeling construction and grand opening of the hotel’s newest Napoli-style Italian restaurant, Arancino at The Kahala, opening in 2013.
Oldham served most recently as the General Manager of 22° North at Kilohana on Kauai, a restaurant that focused on sustainable business practices from purchasing to waste management in its presentation of farm-to-table cuisine made with food harvested from its own gardens as well as Kauai’s farms and orchards.
The Kahala Hotel & Resort is a recent recipient of several green business practices awards and utilizes locally sourced food products in all of its restaurants.
Oldham attended Pennsylvania State University. He spent nearly ten years as Executive Chef at three fine dining restaurants in Pennsylvania before transferring to Hawaii to work as Executive Chef for Waimea Brewing Company at Aston Resorts’ Waimea Plantation Cottages. He was later named Executive Chef for The Princeville Hotel, a Luxury Collection resort on the island of Kauai. In 2005, he was named Director of Food and Beverage for Sheraton Kauai Resort. His team’s success at Sheraton Kauai was recognized with the award for Most Improved Food and Beverage Division in Hawaii/French Polynesia in 2006. Oldham also served as the pre- and post-opening Director of Food and Beverage for the Westin Princeville Ocean Resort Villas.
