For the Ground Beef (9oz patties)

36 oz                 Certified Angus Beef 80/20 Course Ground Chuck

(80/20 Ground means that 80% is Lean Beef and 20% is Fatty.  This is a good ratio of meat to fat to obtain the perfect burger)

4 oz                   Water

1 tsp                  Salt

½ tsp                 Black Pepper (Table Grind)

For the Sandwich

4                      9 oz Certified Angus Beef 80/20 Course Ground Chuck Patty

4 pc                  Fried Egg

8 pc                  Bacon (2 pc per Sandwich)

4 tbsp               Guacamole

To taste            Raw Thinly Sliced Onion

4 pc                  Sweet Burger Bun

8 slices              Tomato (2 pc per Sandwich)

4 leaves             Green Leaf Lettuce

4 pc                  White Cheddar Cheese

For the beef patty, mix the salt and pepper with the water until dissolved.  Add the ground beef and mix well.  Do not over mix.  Form 9 oz patties.  Be careful to pat together just enough to keep the patty together and not to over pat.  Keep chilled until needed.  When ready to cook, cook the beef patties on a preheated flat grill or a broiler until preferred doneness.  When beef burger is ready to assemble, start with the toasted bun, beef patty, melted white cheddar, fried egg, bacon, guacamole, thinly sliced raw onion, and finish with the top of the bun.  Serve with French fries or onion rings.
